Cake praliné, orange (leçon)

J’ai commencé les cakes par un livre de recette, et ne m'étais pas trop trompée… dès mon premier cake...

Mais il y a des astuces qu’on ne savait pas, en mélangeant, fouettant le beurre, la farine, des œufs avec du sucre… que je viens d’apprendre dans ce leçon du cake (très rare ici, c’est vrai que peu de monde apprennent à faire des gâteaux sans crème et chantilly…)
Cake praliné, orange (8cm x 18cm)

Ingredients A:
butter 50g, Corn flour 24g, Cointreau 20g, salt 0.5g, sugar 80g, 100% unsweetened praline paste 20g, baking powder 1.5g,  egg 1 pc, flour 60g, milk 20g, loaf tin 8x18cm:

Ingredients B:
Cake glaze, dried fruits (plum, apricot etc), pistachios, hazelnuts, vanilla bean (for decoration)

Preparation
SIft flours (to allow air).
Mix butter with praline cream (do not add sugar yet...), then mix the sugar, salt and egg in 2 parts. Use spatula to combine half of the flours, with half of the cointreau and milk at a time.

Combine the rest of flour and Cointreau and Milk until smooth. Butter and flour the loaf tin.

Pour the batter in the middle of the tin, not touching the longer sides, then use the spatula to smother from the centre upward towards the shorter side up to the rim, on both sides, allowing a depression in the centre. (this is to facilitate the cake to rise nicely in a correct inflation !)
Cooking
Preheat 200 degree for 15-20 mins. Put down the lower heat when putting the cake in oven, use 200 degree upper heat to cook for 8-10 mins, use a knife to slide a trough in the middle (to facilitate the cake to rise).
Then put down the upper heat, use 200 degree lower heat to cook for another 10 mins, until the cake rise and burst nicely on top, then put down the lower heat.

Finally use 100-12- degree upper heat to cook for another 15-20 mins until the cake turns golden on top to finish.

PS. Bien sûr un four professionnel permet de mieux maîtriser les températures. Puisque je n'en ai pas, il fallait surveiller de prés lors de la cuisson, en suivant le principe des étapes de cuisson.
